In short:
- Bread makes half the result: country loaf or sourdough, sliced 1.5 cm thick, toasted.
- A savoury toast is built in three layers: a fatty base, the topping, and an acidic or crunchy finish.
- The eight recipes below take 5 to 15 minutes and cost 1 to 3 euros per toast.
- Assembly happens at the last moment: a toast topped twenty minutes before serving has already gone soft.
A good savoury toast depends very little on the recipe chosen. It depends on the bread, its thickness, and the order in which things go on. That explains why a mushroom toast can be remarkable in a café and disappointing at home with exactly the same ingredients.
It is also one of the most overpriced dishes at brunch. A slice of toasted bread and a few well-chosen ingredients commonly sell for 12 to 16 euros. The eight recipes that follow can be made at home for a fraction of that.
Bread makes half the result
The bread in a toast has two jobs: carrying the topping without bending, and staying crisp despite the moisture. Not every bread can manage both.
| Bread | What it brings | Best use |
|---|---|---|
| Country loaf or sourdough | dense crumb, thick crust, slight acidity | every toast, the default choice |
| Rye | strong flavour, tight crumb | smoked fish, sardines |
| Baguette cut on the bias | maximum crust, small surface | buffet toasts, tomato |
| Wholegrain | filling, cereal taste | egg and fresh cheese toasts |
| Sandwich bread | soft, sweet | to avoid, it turns soggy within minutes |
Thickness matters as much as the bread: 1.5 cm is the right mark. Thinner, the slice bends under the topping. Thicker, the crust toasts before the crumb is warm.
The bread is always toasted: two to three minutes in a toaster, one minute a side in a dry pan, or five minutes in a 200 °C oven for a crowd. It is the same principle as for avocado toast, where the bread provides half the structure. One last step changes a lot: leave the slice on a rack for thirty seconds before topping it. Placed straight on a plate, it softens from underneath in its own steam.
The three-layer rule
All good savoury toasts follow the same pattern.
1. A fatty base, spread on the warm bread. Butter, fresh cheese, ricotta, hummus or a simple drizzle of olive oil. It contributes flavour, but above all it seals: fat stops the water in the topping from soaking through the crumb.
2. The topping, the heart of the toast. It must be drained: tomatoes deseeded or grated, mushrooms sautéed until all their water has evaporated, cucumber squeezed.
3. A finish that wakes everything up. It takes three forms, to combine: something acidic (lemon, vinegar, capers, pickles), something crunchy (seeds, nuts, red onion, radish), and herbs (chives, dill, parsley, basil). Without it, the toast is fine but flat.
Salt and pepper go on at the end, on the topping. A pinch of flaky salt on the final layer is tasted far more than the same salt mixed into the base.
Eight savoury toasts, with quantities
Quantities are for one large toast of country bread sliced 1.5 cm thick.
| Toast | Base | Topping | Finish | Time |
|---|---|---|---|---|
| Avocado and poached egg | ½ avocado, mashed, salt | 1 poached egg | lemon, chilli, seeds | 10 min |
| Grated tomato | ½ garlic clove, rubbed | 1 tomato, grated, skin removed | 1 tbsp olive oil, flaky salt | 5 min |
| Smoked salmon | 30 g fresh cheese | 40 g smoked salmon | dill, capers, lemon | 5 min |
| Sautéed mushrooms | 20 g fresh cheese or ricotta | 100 g mushrooms, garlic, parsley | rocket, pepper, lemon | 15 min |
| Scrambled eggs | thin layer of butter | 2 scrambled eggs | chives, pepper | 10 min |
| Ricotta and courgette | 50 g ricotta | ½ small raw courgette in ribbons | lemon zest, olive oil, mint | 5 min |
| Hummus and carrot | 40 g hummus | 1 grated carrot | sesame, cumin, lemon juice | 5 min |
| Sardines | 10 g salted butter | 3 sardines in oil, drained | red onion, parsley, lemon | 5 min |
A few details that make the difference:
- The poached egg needs precise timing, set out in the article on poached egg timing: three minutes for a runny yolk, and an egg as fresh as possible.
- Grated tomato is the base of the Spanish tostada, described in the article on the Spanish breakfast. Grated on the coarse side of a grater, the skin stays in your hand and the pulp soaks into the crumb instead of sliding over it. It is the one exception to the three-layer rule: here, the olive oil goes on top, not underneath.
- Mushrooms must be sautéed over high heat, left unstirred for the first two minutes, and salted only at the end. Salted too early, they release their water and boil instead of browning.
- Scrambled eggs are cooked gently and taken off the heat while still slightly runny, as in the recipe for creamy scrambled eggs: they finish cooking on the warm bread.
- Smoked salmon does not like heat: it goes on toast that has been toasted then cooled, never scorching. It is the same assembly logic as for the salmon avocado bagel, where the fresh cheese acts as a barrier.
The order of service for a crowd
For six people or more, the difficulty is not the recipe, it is the timing.
- The day before: prepare the cold toppings (hummus, seasoned ricotta, red onion sliced into a little vinegar).
- Half an hour before: sauté the mushrooms, grate the tomatoes, take the cheeses out of the fridge so they spread.
- Ten minutes before: toast all the bread in the oven, on one or two trays, and set it on racks.
- At serving time: let everyone build their own toasts, or assemble them in a row and serve straight away.
Hot elements, eggs and mushrooms, are prepared last. Everything else waits without harm.
The mistakes that spoil a savoury toast
- Untoasted bread. It absorbs the topping and turns spongy in two minutes.
- A wet topping laid straight on the crumb, such as tomato slices with no fatty base: the bread is soaked before it reaches the table.
- An overloaded toast. Beyond one centimetre of topping, it has to be eaten with a knife and fork, and everything slides off at the first bite.
- Forgotten seasoning. A toast with no salt, no acid and no herbs tastes of its separate ingredients, not of a dish.
- Bread that is too thick. It dominates everything and stays soft in the middle.
What a toast costs, home versus brunch
The calculation speaks for itself. A slice of sourdough country bread costs about 40 cents.
| Toast | Approximate cost at home |
|---|---|
| Grated tomato and olive oil | under 1 euro |
| Avocado and poached egg | about 1.30 euros |
| Sautéed mushrooms and fresh cheese | about 1.50 euros |
| Smoked salmon and fresh cheese | about 2.30 euros |
At brunch, these same toasts sell for 12 to 16 euros, often without the egg, which is charged as an extra. The bread and the know-how of assembly have value, but the gap mostly says that toast is one of the easiest dishes to make at home, and one of the most profitable not to order.
Frequently asked questions
Which bread should be used for savoury toast?
A country loaf or sourdough, sliced 1.5 cm thick. Its dense crumb and thick crust hold a moist topping without going soggy. Rye bread suits smoked fish very well, baguette cut on the bias suits small toasts. Industrial sandwich bread is the least suitable: it softens on contact with the topping within minutes.
How do you stop savoury toast going soggy?
By toasting the bread and letting it cool for thirty seconds on a rack, so the steam escapes. Then by spreading a fatty layer first, butter, fresh cheese, hummus or olive oil, which acts as a barrier between the crumb and the topping. The wettest elements, tomatoes, mushrooms, cucumber, go on last and at the last moment.
Which savoury toast is the most filling at breakfast?
Those combining wholegrain bread and protein: scrambled or poached eggs, smoked salmon and fresh cheese, sardines. A scrambled egg toast on country bread provides around 18 g of protein, which lasts until lunch. A tomato and olive oil toast, excellent as it is, provides a third of that.
Can savoury toasts be prepared in advance?
The toppings, yes: sautéed mushrooms, grated tomatoes, hummus and seasoned cheeses can be made the day before and kept chilled. The bread, however, must be toasted and topped at the last moment. A toast assembled twenty minutes before serving has already lost its crunch.
How many savoury toasts per person for a brunch?
Two large toasts per person if they are the main savoury dish, just one if they come alongside eggs, a pastry and fruit. In practice, an 800 g country loaf gives about fifteen 1.5 cm slices, enough for seven or eight people as a main dish.
